Greek Chicken Salad

I just love the light Mediterranean flavors of Greek food. This Greek Salad is so versatile, it can easily be several different Salads. I am sharing 3 variations with you today with some of the freshest garden vegetables that were picked just this morning.A Greek Salad is rustic and usually has some of these basic ingredients, tomatoes, cucumbers, onions, Kalamata Olives and Feta Cheese. A very simple rustic salad and the dressing makes this salad a star. Horiatiki a Greek term and is used to describe this salad and means country salad, peasant salad, or village salad. Adding the lettuce is an American addition the addition of the chicken is our family favorite. Hope you enjoy this awesome salad!
