Orange Kale and Wild Rice

We have had the most beautiful Kale in our winter garden this year and it is so nice to just go out to the garden and bring it into the kitchen and enjoy the fresh Kale. We have really enjoyed our Kale this winter in salads, smoothies and it is a great addition to rice and pasta.  Today I am making a recipe featuring the Kale with Wild Rice and Orange, I just love that blend of flavors in this dish. 

Orange Wild Rice and Kale


Orange Kale and Wild Rice
Miz Helen's Kitchen
Ingredients
3 cups Kale, chopped
1 cup Green Onions, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1/2 cup Orange Juice
2 tablespoons Orange Zest
1 teaspoon salt
1 teaspoon pepper
1- 6 oz box Long Grain and Wild Rice with seasons
Directions
Prepare the Wild Rice with seasons according to directions and set aside
Wash and chop the Kale
Heat the olive oil in a heavy skillet and add the chopped onion and garlic, saute just about 1 minute
Add the Kale,salt and pepper saute until completely wilted mixing with the onion and garlic
Add the Kale and Onion mix to the rice a mix
Add 1/2 cup of Orange Juice to the Rice and Kale and mix well
Garnish with Orange wedges

 Saute The Kale, Onions and Garlic


 Add The Wild Rice and Orange Juice


Enjoy!


This is a very simple dish but very flavorful a great side dish for any meal.  Next year we are planting more Kale, it has been a winner in the garden and the kitchen.  It is always good to have you in the kitchen with us so come back real soon!

  3. This sounds delicious! I wonder how it would be with quinoa instead of rice? And how easy is it to grow kale in your garden?

    1. Hi Linda,
      I think the recipe would be great with Quinoa, I would just add the orange juice to the Kale and let it reduce just a bit before mixing it with the Quinoa. The Quinoa won't absorb the liquid the way the rice will, but it would taste great.

      It is really easy to grow Kale. We grow it as a winter vegetable and it just thrives. I sometimes plant it in the flower beds, it is real pretty all winter. We plant it in the fall and have it all winter into the late spring. We will replant in the spring, but then it doesn't do well in the heat that we have in July and August.
