It is great to be back here with you this week. My sweet husband and I took some downtime last weekend and it was so nice, but I am always ready to get back home, I am a bit of a homebody. There was so much good food here last week when I went back and looked at all of your wonderful recipes. We have some Apple Hand Pies for a special treat today and I sure hope that you will enjoy them. Now lets see what you have brought to share today and get it on the table so we can eat.

Background Story on Full Plate Thursday
When we were young and just starting out in life sometimes we did not have a lot of money. Most of our friends were having to stretch the dollars at the end of the month just like us. My girlfriends and I decided that we would pool our food for some of the evening meals right before payday... the last week of the month. I have some of the fondest memories from those days. We would all bring our food together and we had some great food and great fellowship. We would get the food on the table and everything ready, someone would bless the food and then the hostess would say "come fill your plate".

Apple Hand Pie

We just love an old fashioned Apple Hand Pie. I remember when my Grandmother made them she fried them and they were called fried pies. In an effort to have a healthier pie,(if there is such a thing) my Apple Hand Pie's are baked, but with the same flavor that my Grandmother's pie's had. I really like to make these pies and put them in the freezer in individual bags, then they make great grab 'n go pies. We take them in the picnic basket, and even have them at tea time, plus they make great gifts for a friend.

Ingredients
2 -9 inch pie crust
4 cups apples, sliced
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon all spice
1/4 teaspoon salt
2 tablespoons corn starch
1/2 cups water for apples
1/3 cups water for corn starch
1 egg, beaten
Directions
Peel the apples and slice them
Place the apples in a large sauce pan and add the sugar, cinnamon, all spice and salt, toss the apples in the seasons then add 1/2 cup water and stir well
Cook the apple mixture on medium high until all the sugar is melted and the mixture is boiling stir constantly
After the apples are tender, about 10 minutes, mix the corn starch with 1/3 cup water and mix well
Add the corn starch liquid to the apples and remove the apples from the heat, continue to stir until the apple mixture is thick.
Set the apple mixture aside and let cool to room temperature.
Roll out each pie crust and cut in half to make 4 hand pies or into 4 parts for 8 hand pies.
If you are making the 4 pies, add 3 tablespoons of the apple mixture in the center of the round, and if you are making the 8 pies use 1-1/2 tablespoons of the apple mixture in the center of the round.
Moisten the edges of the dough circle with water and fold the other half over to form the pie, press the edges together to seal. I like to use the edge of the tines of a fork to crimp the edges, just the way my Grandmother did.
Brush the top of the pie with the beaten egg
Place the pies on a parchment lined baking sheet
Bake for 15 to 20 minutes at 400 degrees
Remove from the oven and let cool before serving (if you can)
Enjoy!

Rosemary Skillet Chops

If I told my son that we were having Rosemary Skillet Chops today he would come right over, this is one of his favorites. Actually these chops are very simple and very flavorful, so tender you can cut them with a fork. I was trying to remember the first time I ever had these chops, it was at my aunts house, many many long years ago. I watched her very carefully as she prepared the chops, then one day I made my own. The recipe has been refined through the years, but it is still one of our favorites.

Ingredients
4 Center Cut Bone In Pork Chops
Rub
2 tablespoons fresh rosemary, chopped
1 teaspoon dried thyme
1 teaspoon salt
2 teaspoon pepper
1 teaspoon garlic powder
1 cup water
Directions
Mix all the seasons together well
Rub the dry mixture all over the chops and let set at room temperature for 30 minutes
In a tested hot skillet (to test the skillet, drop a few drops of water in the skillet and when the water drops form a rolling ball the skillet is hot enough for the chops.)
Place the chops in the hot skillet with NO OIL, leave the chop on one side until it will move without tearing the meat, then turn the chops.
Brown the chops on that side
Pour 1 cup water in the skillet and QUICKLY cover the chops and reduce the heat to low.
Cook the chops on low for 10 minutes, then turn the chops and cook 10 more minutes
Remove the chops from the heat and let set for 10 minutes before serving.
Garnish With Fresh Rosemary

Whats For Dinner Next Week 2-23-14

We have been in the garden and we are so excited about getting some of our early spring vegetables planted.  It is wonderful to be outdoors again after such a long winter.  I am sure glad that you could come out to the country today and enjoy coming out to the garden with me. We are doing the Happy Dance here, the sun is shining! We have been in the garden and getting the fresh vegetables started for all those wonderful vegetable dishes that we will have from the garden this spring and summer.  I am so glad that you could make it out to the country today, what a great day to come out and enjoy the fresh air and fabulous food that everyone will be bringing. Chicken and Chilies Bake

There is nothing that smells better than a Green Chili roasting on the fire. During the Chili harvest each year we always roast some Green Chili's and freeze or can them for the winter months. The Green Chilies that I am using in this recipe today were roasted and put in the freezer last summer during the harvest. When people ask me why are you doing all that canning and freezing in the spring and summer, I always say it is going to be so good when the snow is on the ground, and it is!

Chicken and Chilies Bake

Ingredients
For The Chicken
4 Boneless Skinless Chicken Breast
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin powder
1 teaspoon garlic powder
1 teaspoon fresh cilantro, chopped
Dash Cayenne pepper
2 tablespoons Olive Oil
For The Sauce
2 cups Sour Cream
2 cups Green Enchilada Sauce
2 cups Roasted Green Chilies, chopped
1/2 teaspoon salt
Dash Cayenne pepper
Top With
2 cups Pepper Jack Cheese, grated
For Garnish
Fresh Cilantro
Roma Tomato, chopped small
Directions
Wash and dry the chicken breast.
Prepare a rub with the seasons for the chicken mix well and rub the chicken breast on all sides with the season rub.
Heat the olive oil in a large skillet and brown the seasoned chicken on both sides.
Remove the chicken to a baking dish.
In a medium bowl mix the sour cream, Green Enchilada Sauce, Roasted Green Chilies, 1/2 teaspoon salt and a dash of Cayenne, mix well.
Reserve 1 cup of the mix to serve on the side with the baked Chicken.
Pour the remainder of the sour cream and chili mixture over the chicken.
Cover the sauced chicken with the grated Pepper Jack Cheese.
Cover the baking dish and bake at 350 degrees for 50 minutes
Remove from oven and garnish with fresh cilantro and chopped tomato
Enjoy!

Whats For Dinner Next Week 2-16-14

We have some lovely spiced tea and some scones ready to enjoy, come on in the kitchen and get warm by the fire.  We have spent a lot of time with comfort food in front of the fire this winter, but we have completed some re organization projects which I am very excited about.  This morning I am busy planning The Menu for next week and one of the fun things we are having next week is a Indoor Picnic, just to give us a little hope for spring and summer.
