Southwest Salad with Avocado Dressing

Sometime when we come in from the garden with fresh lettuce, tomatoes and other vegetables, a salad is just the thing to make for lunch or dinner. I love this salad because it is so versatile, just add more vegetables, chicken, beef or fish and the salad takes on a whole new flavor. The Avocado Dressing for the salad could easily double for a dip or a sauce for another great dish. This is a recipe to have fun with and make it different every time.


Southwest Salad with Avocado Dressing

Adapted From Jenny's Cookbook
1/2 head Romaine Lettuce
1/2 head of Iceberg Lettuce
1 cup cilantro leaves or flat parsley
1 cup whole kernel corn
1 cup black beans
3 medium tomatoes, chopped
5 green onions, with green tops, chopped
2 ripe avocados, chopped
Dressing
1 avocado, chopped
1/2 cup sour cream
2/3 cup buttermilk
1 clove garlic
4 green onions with green tops
juice of 1 lemon
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Tex Mex seasoning
Direction
For Salad
Place all the salad ingredients in a large chilled bowl, mix well and refrigerate.
For Dressing
Place all the dressing ingredients in the blender or food processor.
Blend until smooth and creamy.
Dress the salad just before serving.
Additions
Add Chicken Strips, Beef Strips, or Shrimp
Variation
We enjoyed making a Southwest Chicken Salad Wrap, it is delicious!
The Dressing tends to be very thick and can be used as a dip, it has a great flavor.

Add The Corn, Black Beans and Avocado


Make The Dressing


Blend Until Creamy


This Is A Great Dressing or Dip
