Slow Cooker Lasagna

We attend at least one or two Pot Luck Dinners every month and there is always so much wonderful food. One of the events we went to recently had an Italian Night so I decided to take my Slow Cooker Lasagna. Through the years this recipe has gone to sports events, family reunions, and many ladies events. It is a recipe that is full of Italian flavor and yet so easy to put together and then go on with your day and enjoy the party.

Slow Cooker Lasagna




Slow Cooker Lasagna
Miz Helen's Kitchen
Ingredients
1 pound Italian Sausage
1 pound ground chuck
2 cups diced tomatoes with juice
1 medium onion, chopped
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic, minced
2 tablespoon oregano
1 tablespoon parsley
1 tablespoon basil
1 teaspoon anise seed
1 1/2 cups tomato paste
3 to 4 cups water
non stick cooking spray
1 package uncooked lasagna noodles
32 ounce container of Ricotta Cheese
4 cups Mozzarella Cheese, grated
1 cup Parmesan Cheese, grated
1 egg,beaten
8 cups fresh spinach
Directions
Brown the Italian Sausage and the ground chuck in a large sauce pan or dutch oven and drain
Add the onions,  tomatoes, garlic, 1 tablespoon oregano and the remainder of the seasons, mix well
Add the tomato paste and water, mix well. Simmer for at least 10 minutes.
In a mixing bowl, stir together 1 tablespoon oregano, Ricotta Cheese, Mozzarella Cheese, Parmesan Cheese and the beaten egg, mix well
Spray the inside of the Slow Cooker with the non stick cooking spray
Turn the cooker on low at this point
Divide the sauce and the cheese in three parts
Layer one part to the sauce on the bottom of the cooker
Next break the lasagna noodles in half and place them on top of the sauce, completely covering the sauce
Next layer one part of the cheese mixture on top of the lasagna noodles
Next layer 1/2 of your spinach on top of the cheese layer
Repeat these layers ending with the last part of sauce then a layer of the cheese mixture on top
Cook on low for 3 hours
Let set without heat for at least 30 minutes before serving

  3. Are these the regular lasagna noodles that you generally boil first or the special ones that are made not to boil first? I want to make this next week for my daughter's B'Day party. She wants another pasta dish first, but I will need to supplement to feed the crowd and this will make a nice addition because it doesn't need my small oven which is taken up with the first dish. Whew! So many details. :)

      These are regular Lasagna Noodles from the box, right out of the box just break them in half and place them on top of the sauce, they will be perfect. Be sure and don't cook it longer than 3 hours or the noodles will get to done. Sounds like a great party and hope you enjoy the Lasagna!

    2. Whew! I guess I didn't read this first - or I didn't remember. I bought the oven ready lasagna noodles and made this. It was OVER THE TOP! It made a crockpot full with not an inch to spare and I have a large one, but was possibly the BEST LASAGNA I have ever tasted. I have never made lasagna in a crockpot and was keeping my fingers crossed that it would work and it more than worked -- it was a delicious BIG HIT! You are one classy cook Miz Helen. Thank-you so much for a wonderful recipe which made a wonderful party! I will make it again and again. I remain your happy reader.

  9. I love the idea of being able to make lasagne in the slow cooker. Not only does it allow me to get dinner started early in the day, but I love how the house smells as dinner cooks. Trying this recipe for sure, the family will love it.

  13. This looks delicious. I love the idea of baking it in the slow cooker because the sides are a lot higher. When I make lasagna I always have the problem of the sides of my baking dish not being high enough. Thanks for sharing this at Making Monday. Have a great week.
