Country Chicken and Biscuits

I always sit down with my calendar every week when I plan my menus.  When we are going to have one of those cozy nights at home all curled up in our comfy clothes, I like to plan a real comfy and cozy meal to enjoy.  Country Chicken and Biscuits is one of our favorite meals to cozy up with on a stay at home night.  Country Chicken and Biscuits Country Chicken and Biscuits Miz Helen's Kitchen Ingredients 3 cups cooked chicken, chopped 1 1/2 cups frozen peas and carrots, steamed 1/4 cup butter 1/2 cup flour 3 cups chicken broth 1/2 cup milk 1/2 cup pimento's, chopped 1 teaspoon dried thyme 1 teaspoon poultry season salt and pepper to taste dash Cayenne Directions Add poultry season, salt and pepper to the cooked chopped chicken Steam the peas and carrots In a large stock pot or skillet on medium heat, melt the butter and add the flour, chicken broth and milk, stirring until smooth, add the dried thyme, salt and pepper to taste stir u

Full Plate Thursday Where The Greatest Cooks On The Planet Gather I am so excited to see you today, it is such a beautiful time to take a drive to the country.  Our Farmers Market and all the little fruit stands along the way announce that fall is truly in the air with their many displays of Apples and Pumpkins.  I was making an  Apple Pie the other day and thought I better make another one because all of you are coming today, so get a slice of this pie and enjoy the day.  Lets get your food on the table I can't wait to see what you brought today. Slow Cooker Cheesy Potato Soup I love coming home after a busy day to a great soup simmering away in the Slow Cooker.  This is a real simple and flavorful Potato Soup that we just love, a real stick to your ribs comfort soup.  We just love to cozy up for the evening with this awesome bowl of soup.


Whats For Dinner Next Week 10-20-13

We have had so much fun here at the cottage this week, putting out our hay bales, pumpkins and placing those mum plants and pansies in just the right place.  We just put our scare crow family out a little bit ago and it really looks like fall here.  We are ready for the trick or treater's and the gala family thanksgiving.  I will be trying out several new recipes between now and thanksgiving to add some new dishes to the menu for Thanksgiving.  I am already so hungry for Turkey and Dressing and all the trimmings.  My friend stopped by this morning and we sat on the porch sipping our hot apple cider, it was really chilly out this morning and a perfect day to chat with a friend sip cider in front of the fire.  Sunday Fall Pot Roast Kale and Apple Salad   Our Daily Bread Caramel Apple Blondie Pie Monday Planned Left Overs From The Left Over Roast and Vegetables   Roast Beef Hash on  Toasted Bread Green Tossed Salad Left Over Caramel Apple B

Bar B Que Meat Balls with Sauce

We were invited to a little covered dish event last week and I was asked to bring a meat dish. It was a casual event so I made my Bar B Que Meat Balls. They are great to have on hand in the freezer or to make fresh, they are always a hit with a crowd. We really enjoy these little Meatballs and hope you will enjoy them. Bar B Que Meat Balls With Or Without Noodles Bar B Que Meat Balls Miz Helen's Kitchen The Meat Ball  10 to 12 Meatballs Ingredients 1 pound Ground Chuck ( We Use Grass Fed Beef) 1/2 cup Onion, chopped fine 2 pods Garlic, minced 3/4 cup Bread Crumbs 1/2 cup milk 2 Tablespoons Parsley 1 teaspoon salt 1 teaspoon pepper Dash Hot Sauce (or more to your taste) Directions Mix the Ground Chuck, Onion, Garlic, Bread Crumbs, Milk, Parsley, Salt, Pepper and Hot Sauce, mix until the mixture is blended really well Roll the Meatball until smooth and round Place the Meatballs on a shallow baking sheet Bake the Meatballs uncove


Jalapeno Bread

With the recent rains and the cooler fall temperatures our jalapeno plants are really producing.  In the fall they tend to turn red much sooner, and that means they are hotter. The Jalapeno Bread recipe is a great recipe to use some of those awesome jalapeno's and it is delicious.  It smells wonderful as it is baking in the oven and then the first slice just melts in your mouth.  Jalapeno Bread Miz Helen's Kitchen Ingredients 3 cups all purpose flour 3 teaspoon baking powder 1 teaspoon salt 1/4 cup sugar 3 tablespoons jalapenos, chopped 2 cloves garlic, chopped 1 cup sharp cheddar cheese, grated 1 1/2 cups beer 2 tablespoons butter, melted Directions Preheat oven to 375 degrees Spray a loaf pan with cooking spray In a large mixing bowl, combine flour, baking powder, sugar, and salt, mix well Add the jalapeno's, garlic and cheddar cheese, mix well Make a well in the center of the dry ingredients and pour the beer in the well, mix well until completely
