Corn and Green Chili's Casserole

When we are harvesting the corn in the late summer, we always put some in the freezer to use after the corn is no longer producing.  We prepare it in several different ways, roasting then cut the roasted kernels off the cob, on the cob, and just plain corn.  I am making this recipe from some of the frozen corn that we put up from our last corn harvest.  This is a great side dish that is very colorful with a southwest flavor, certainly a dish for all year round.

Ingredients
4 cups whole kernel corn
4 green onions with tops, chopped
1 red bell pepper, chopped
2 cups roasted green chili's, chopped
1 small jalapeno, seeded and chopped fine
2 tablespoons flour
2 teaspoons baking powder
4 eggs, slightly beaten
1 cup sour cream
3/4 cup half and half or whole milk
1 cup sharp cheddar cheese, grated
1/2 teaspoon Salt 
1 teaspoon pepper
Butter to butter the baking dish
Directions
In a food processor, blend together the flour, baking powder, and salt.  Add the slightly beaten eggs, half and half or milk, sour cream, and 2 cups of the corn.  Blend until almost smooth and not to many lumps.
Pour the blended corn into a large bowl and add the chopped green onions, chopped green chili's, chopped red bell pepper,seeded and chopped jalapeno's and mix well.  
Add the grated cheese, 1 teaspoon pepper, the remaining 2 cups of whole corn and mix well
Generously butter the baking dish
Pour the corn mixture into the baking dish
Bake in a pre heated oven at 350 degrees for 45 to 50 minutes, until slightly browned and the center is set.
Let cool for 15 minutes before serving

    1. Hi Lynn,
      I will be happy to help you out, the recipe calls for green chilies, like hatch green chilies, you can buy them canned in most super markets, look in the Mexican Food section. You could use poblanos, I just prefer the flavor of the green chili. Hope you enjoy the casserole
