Candied Lemon Thyme Bread

I just love to have a nice flavored bread that we can enjoy with our morning coffee or afternoon tea, or maybe just a simple dessert for lunch or a casual supper.  This is a wonderful full flavored bread with a hint of sweet and savory in an unusual combination.  We really enjoy this bread and hope you will to.

Candied Lemon Thyme Bread

The Bread
Ingredients
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons thyme
3/4 cup sugar
2 eggs
3/4 cup half and half
6 tablespoons butter
4 tablespoons fresh lemon juice
Zest of 1 lemon 
1 sprig thyme for garnish
Directions
Sift the flour, baking powder, salt, together in a medium bowl and stir in the thyme
In a mixing bowl, cream the butter, gradually adding the sugar and beat until flufffy
Add the eggs one at a time beating after each addition
Mix in the Half and Half, Lemon Zest, and Lemon Juice into the butter and sugar mix, alternately adding the dry ingredients
Mix just until the batter is mixed well and don't over mix
Pour the batter into a buttered 8 inch loaf pan 
Bake 350 degrees for 45 to 50 minutes
Remove the bread from the pan and place on a cooling rack sitting on a cookie sheet
Glaze the bread with the syrup from the Candied Lemons
After the Glaze has had a chance to soak into the bread, about 15 minutes
Drizzle the Lemon Frosted Glaze over the Bread
Garnish with Candied Lemons

The Candied Lemons
Ingredients
2 lemons
1 cup sugar
1 cup water
Directions
Wash the lemons and slice 1/4 inch thick
Bring the sugar and water to a boil in a large saucepan until the sugar dissolves.
Add the lemons, and cover the surface with a round of parchment paper.
Reduce heat to medium low and simmer gently until the rinds are translucent, about 30 minutes.
Let the lemons cool in the syrup 
Take the cool lemons out of the syrup and dry on a rack sitting on a cookie sheet
Reserve the syrup to use as a glaze for the bread and also makes a great syrup for pancakes

Lemon Frosted Glaze
Ingredients
3 cups confectioners sugar
1/4 cup fresh lemon juice
Directions
In a medium bowl whisk all the ingredients together and mix well until the desired consistency is reached
