Whats For Dinner Next Week 9-30-12

For the past few weeks I have been cooking from Muy Bueno, a beautiful new cookbook that will soon be published.  I will be giving away a copy of this book to one of my readers so you will want to be sure and watch for the giveaway post coming this week. Portland Food Courts Day Trip

One of the great "foodie" experiences that we enjoyed on our trip to Oregon was the Food Courts.  There are 100's of Food Courts and one of the fun things about visiting a food court is  the variety in the food.  Its a lot of fun to walk around look at all the menus and talk to the vender's.  Green Castle  is one of the many Courts that we enjoyed.

Full Plate Thursday 9-27-12


It's Full Plate Thursday Where All The Greatest Cooks On The Planet Gather

 We are doing some end of summer canning this week as the production of our Spring and Summer garden is just about over. We have been pulling the non producing garden and getting the soil ready for the winter.  Some of the things we have canned this week are End Of Season Soup and Grandmothers Chow Chow.  The weather is perfect so we can have the doors and windows open to enjoy the fresh air while we can.  I am so excited to see you today and can hardly wait to see what you have to share with us.   Thank you so much for coming today and hope you can come back soon!

When we were young and just starting out in life sometimes we did not have a lot of money. Most of our friends were having to stretch the dollars at the end of the month just like us. My girlfriends and I decided that we would pool our food for some of the evening meals right before payday... the last week of the month. I have some of the fondest memories from those days. We would all bring our food together and we had some great food and great fellowship. We would get the food on the table and everything ready, someone would bless the food and then the hostess would say "come fill your plate".

Green Chili With Beef and Potatoes

Chile Verde Con Carney Papas, this is a versatile dish that can be eaten as a stew, topping for a burrito or Chili Rellenos.  This is a recipe from the beautiful soon to be published cookbook Muy Bueno. The  Muy Bueno cookbook is written by Yvette Marquez-Sharpnack, Veronica Gonalez Smith, Evangelina Soza and inspired by their Mother and Grandmother Jesusita, with beautiful photography by Jeanine Thurston.  I am honored to participate in the Spotlight Cookbook Cook Off  sponsored  by Hippocrene Books and hosted by Girlichef,  to introduce this new cookbook to all of you.  Jesusita's House Salsa is the secret and inspiration for this great recipe, just wait til you taste it!

Green Chili With Beef and Potatoes


Green Chili With Beef and Potatoes
Muy Bueno
Prepared In
Miz Helen's Kitchen
Serves 6
The Salsa
Jesusita's House Salsa
6 to 7 Anaheim chiles, roasted and peeled
1 or 2 jalapeno peppers, roasted (optional)
1/2 teaspoon salt
3 cloves garlic, finely diced
1 (1/4.5 ounce) can whole tomato
1/4 cup tomato sauce
In a food processor or blender, pulse the roasted and peeled chiles, jalapeno peppers, if using, salt, garlic, canned tomatoes, and tomato sauce for a few seconds.  You do not want to puree it- chunky is best with the flavorful salsa. This Salsa is a perfect appetizer with a basket of your favorite tortilla chips or as the base for several of their wonderful recipes!

 When you make this fabulous Salsa, be sure and put the amount required for the recipe aside, before you let it out of your sight, or else you won't have enough for the recipe.  I was hiding this Salsa so I could have enough, it is delicious.  I have made several batches of this Salsa and it has become a favorite here already!

The Green Chili With Beef and Potatoes
1 tablespoon canola oil or shortening
2 1/2 pounds stew beef, diced
3 medium russet potatoes, diced
1 teaspoon salt plus additional to taste
5 cloves garlic, minced
1 1/2 tablespoons flour
1 1/2 cups Salsa Casera (Jesusita's House Salsa) recipe is above
2 /12 cups water
Heat oil in a large skillet.  Place the beef, potatoes, and 1 teaspoon salt in the skillet and cover and cook for about 10 minutes, until meat is cooked and potatoes are tender.
Uncover and add garlic and cook for an additional 2 minutes.  Add flour and stir at least 2 minutes.  Add salsa and water and stir.  Let mixture come to a boil.  Add additional salt to taste.  Lower the heat and simmer for 5 minutes.

There was something so comforting to us as we enjoyed the Green Chili With Beef and Potatoes, we just loved it.  We had just enough left to have it with a burritto the next day, it was awesome and of course we kept adding more salsa to both.  


I Garnished With Some Chopped Avocado, Cilantro and Lime

Whats For Dinner Next Week 9-23-12

Happy Fall! We are really enjoying our beautiful fall weather right now. We are beginning to pull out the summer garden that isn't producing anymore and prepare the ground for winter. I noticed that my neighbors were heading out with a load of pumpkins for market this morning, I sure hope they are saving me some of those fabulous pumpkins.  Come on back to the porch and we will sit and have some Hot Tea, Harvest Bread and visit about our Menu for next week.

Mexican Bread Pudding

It is with pure joy that I am presenting this recipe for Mexican Bread Pudding or Capirotada as some Latinos would say.  This is a recipe from a beautiful new soon to be published Cookbook, Muy Bueno by, Yvette Marquez-Sharpnack, Veronica Gonzalez-Smith, and Evangelina Soza with fabulous Photography by Jeanine Thurston. Heather at Girlichef invited me to participate in this Cookbook Spotlight to introduce Muy Bueno and I am thrilled to participate!
Mexican Bread Pudding


Mexican Bread Pudding
Muy Bueno
Prepared By
Miz Helen's Kitchen
4 Bollio Rolls or French Rolls
4 tablespoons butter or spray butter
4 1/2 cups water
12 ounces piloncillo or 1 1/2 cups packed dark brown sugar
4 cinnamon sticks
6 whole cloves
1 cup raisins
3 cups shredded Longhorn Cheddar or Colby Cheese
Preheat Oven to 350 degrees F
Cut rolls into 1/2 inch slices and butter both sides of each slice.  Layer on a baking sheet and bake for 3 minutes on each side, until lightly toasted and dry.  Remove and cool.  

Combine water, piloncillo, cinnamon sticks and cloves in a large saucepan.  Bring to a boil; reduce heat, and simmer uncovered for 20 minutes, creating a syrup.  Remove from heat, cover, and let steep for 2 hours.  Pour through a strainer and discard cinnamon sticks and cloves. Set syrup aside.

Spray an 8 inch x 10 1/2 inch baking dish with non-stick spray.  Layer the ingredients in the following order: a third of the toasted bread, a third of the raisins, a third of the cheese, and then pour 1 1/2 cups syrup evenly over cheese.  Wait 15 minutes and then layer another third of the bread, raisins, and cheese, and pour another 1 1/2 cups syrup evenly over cheese.  Let soak for another 15 minutes.  Top with the remaining bread, raisins, and cheese, and pour remaining syrup evenly over bread.  Let set for another 15 minutes.

Cover the dish with aluminum foil that has been sprayed with nonstick spray and bake 40 minutes. Uncover and bake until cheese is golden brown, about 10 to 15 minutes more.
Serve Warm
8 to 10 Servings

Ready To Serve
This very flavorful recipe filled our home with smells that brought me back to my childhood when we would have this pudding on very special occasions at my cousin's house.  It is just delicious!

Whats For Dinner Next Week 9-16-12

We have had the greatest weather this week, we have been able to have our doors and windows open and let the fresh air in and that is awesome.  We have some remodeling going on in the bathroom so it is good to have the house open to let all those paint smells out.  It is always nice to be able to spruce things up a bit before going into the fall and winter when we will be indoors so much.  Come on back with me and I will give you a peek of the project and talk about the menu for next week.
