We have had our Easter decorations out for awhile now, because it seems like Easter is coming so early this year, the time is flying by. We are starting our preparations for Easter this week getting ready for the big Egg Hunt and other family activities that are so much fun at Easter time. Welcome to Full Plate Thursday, I am so excited to see you today.   Spring is popping out all over and certainly our food reflects the season. Every week when I am preparing for you to come and share the day with us I think about all the wonderful food that you will be bringing and the great fellowship that we have here every Thursday. Full Plate Thursday Background Story

When we were young and just starting out in life sometimes we did not have a lot of money. Most of our friends were having to stretch the dollars at the end of the month just like us. My girlfriends and I decided that we would pool our food for some of the evening meals right before payday... the last week of the month. I have some of the fondest memories from those days. We would all bring our food together and we had some great food and great fellowship. We would get the food on the table and everything ready, someone would bless the food and then the hostess would say "come fill your plate".
I have just a few suggestions before you leave your dish and fill your plate.

Best Cherry Pie

"Can she bake a Cherry Pie, Billy Boy, Billy Boy?"  I remember hearing my Mother singing that little tune when she would be baking this Cherry Pie. I always knew that we would have Cherry Pie that night for dessert when she started singing that little tune. This is a great Cherry Pie recipe that has been in our family since I can remember, and that's a long time, lol.

Best Cherry Pie

Miz Helen's Kitchen
Makes One Pie
 2- 9 inch pie crust
4 cups fresh Tart Cherries pits removed
1 cup sugar
1/2 cup brown sugar
1 teaspoon cinnamon
 1/2 teaspoon allspice
4 tablespoons cornstarch
1 teaspoon vanilla extract
Milk to brush on crust
sugar to sprinkle on crust

Place the pitted cherries into a medium saucepan and heat over medium heat, the cherries should lose quite a bit of juice.
Add the sugar and the seasons and mix well.
Add the Vanilla and mix well. If you don't have enough liquid to make a sauce then add 1/2 cup of water.  Bring the Cherry mixture to a boil, stirring constantly, add the cornstarch that has been mixed with 1/4 cup water. If your mixture is not thick enough, add more cornstarch.  Remove from heat and stir well.
Cool mixture to room temperature.
Prepare the pie crust then pour the cooled Cherry Mixture into the pie crust. Place lattice on top of the pie and brush the crust with milk. Sprinkle the top of the crust with sugar.
Bake at 375 degrees  for 15 minutes then reduce the heat to 350 degrees for 40 to 45 minutes keep checking the pie so the crust does not burn. Depending on your oven, you may have to cover the crust in the last 20 minutes.

Whats For Dinner Next Week 3-25-12

I am so excited about Spring we have had enough rain that our lake is now full and it just looks beautiful. We got 5 1/2 inches of rain in 24 hours last week so that really helps. Come take a walk with me just down in The Garden Gate and we will sit on the patio and have our morning coffee and enjoy the beauty of spring and talk about The Menu for next week.

Slow Cooker Green Chili Stew

When it gets really cold and rainy outside one of the favorite stew's at The Country Cottage is Green Chili Stew. It is real comfort food for us, and that is what we are making today. We like to serve it with warm homemade tortilla's and I can't wait until it's ready!

Green Chili Stew
Miz Helen's Kitchen
1 1/2 to 2 pounds Stew Meat
2 teaspoons olive oil
8 cups Red Potatoes medium chop with the skin on
2 cups yellow onion chopped medium
2 cups Green Chili's chopped with juice
2 cups stewed tomatoes chopped with juice
1 jalapeno pepper chopped
4 cloves garlic minced
2 teaspoons ground cumin
1/2 teaspoon oregano
1 teaspoon ground chipotle chili powder (optional)
2 to 3 cups water
Salt and pepper the stew meat on all sides. In a hot skillet heat the olive oil and brown the stew meat.
Add the browned meat to the Slow Cooker.
Add the remainder of the ingredients and mix well.
Salt and Pepper to taste.
Cover the Slow Cooker and cook on High 3 hour's  until the meat and vegetables are tender.
This will make it own wonderful thick stew gravy.

When the calendar rolls over to March, I think of time change, St Patrick's Day, Rubens, and Basketball. Its March Madness Time, and we are having a small group of friends over to enjoy some basketball with us. We have had some beautiful weather and are able to use our grill, so I wanted to cook outdoors. I developed this burger just for the party, but we will be having it again and again, it is a great burger!

1/4 pound Cooked Corned Beef chopped very fine in the food processor

1 onion, chopped

1 pound ground chuck (we use grass fed beef )

1/4 cup parsley, chopped

dash cayenne pepper

Salt and Pepper to taste

2 cups Sauerkraut

Sliced Swiss Cheese

Thousand Island Dressing

Buns of your choice

In the food processor chop until fine the Corned Beef and the onion.

Mix the ground chuck, Corned Beef and Onion Mix, parsley, cayenne pepper, salt and pepper then make the Ruben Burger Patties. I always make a little indent in the center to keep them from being really hard, it helps to keep them moist. 

Grill the burgers, just before they are done place a slice of Swiss Cheese on top of each burger.

 Toast the buns and dress the buns with Thousand Island Dressing, add the Cheese topped burger and then add the desired amount of Sauerkraut on each burger.

Serve Hot and best with a Kosher Dill Pickle and Chips

Southwestern Breakfast Bake

I just love being a part of the Secret Recipe Club, it gives me an opportunity to meet new bloggers,  prepare their recipes and discover new ideas. This month my blog assignment is This Mama Cooks! On A Diet  Anne Marie stared blogging in 2004 and has a very interesting blog. Her mission is to "help people-especially busy moms and their families- get on the road to living a more healthy lifestyle by sharing good-for-you recipes and lifestyle tips". Anne Marie has great recipes and it was fun searching her blog for the recipe I wanted to prepare. This Mama Cooks On A Diet

Prepared In:

Miz Helen's Kitchen

1 11 ounce can Mexicorn, drained

1 4 ounce can green chilies, chopped

1 bunch green onions, chopped

8 corn or flour tortillas, quartered

2 cups reduced fat Mexican blend cheese, shredded

4 eggs

6 egg whites

2/3 cup skim milk

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

Salt and Pepper to taste

Preheat oven to 350 degrees and coat a 13X9 pan with nonstick cooking spray

In a mixing bowl combine Mexicorn, green chilies, and green onions.  Line bottom of pan with a layer of tortillas, top with half of the corn mixture, then half of the shredded cheese. Repeat layers.

In another bowl, whisk together remaining ingredients. Pour over layers in pan and let sit 10 minutes

Bake 30 to 35 minutes or until puffed

Miz Helen's Recipe Tips

I used Corn Tortillas and garnished with Avocados and Orange Slices, served with homemade Salsa on the side.  A good addition would be a breakfast meat like a regular country sausage or ham. A Mexican Chorizo would also be a good addition, but would need to be drained, before adding.

It just seems like yesterday and we were adjusting our clocks to daylight savings time and here it is again. Spring is here. My yard is filled with beautiful wild flowers, daffodils, and the trees are beginning to bloom and set on leaves. St Patrick's Day is Saturday and we will be enjoying the local St Patrick's Day Festival. I am glad you are here today you can help me finish a project for the festival and give me ideas for next weeks menu.
