Cherry Nut Chicken Salad

This time of the year I am always looking for a great dish to take to a social event.  We live in a rural area so most of the time it is a covered dish event.  One of the new dishes that I developed this season is this Cherry Nut Chicken Salad.  It is a great Chicken Salad that you can really do so many different things with.  Today I am sharing it with you on a luncheon plate for a ladies luncheon, and I also took it in my puffs to another event and it was great.  I am excited to share it with you today.

Cherry Nut Chicken Salad

3 cups cubed, poached chicken breast
1 1/2 cups Red Delicious Apple, chopped fine
1 1/2 cups celery, chopped fine
1 cup dried cherries, chopped
1 cup toasted pecans, chopped
1 cup Greek Yogurt
1/2 cup Mayonnaise ( I make my own)
2 teaspoons thyme leaves
1 teaspoon salt
1 teaspoon fresh ground pepper
1/8 teaspoon cayenne pepper
Method
Poach the chicken breast in a seasoned poaching liquid of water, 3 cups apple juice, 1 chopped celery rib, 1 chopped carrot, 1 onion,chopped 1 garlic pod,1 tablespoon thyme leaves, and 1 tablespoon salt.. Poach the chicken until cooked through.  Remove the chicken from the poaching liquid and set aside to cool.

When the poached chicken is cooled chop the chicken in desired measurement.
Place the chopped chicken into a large mixing bowl
Add the Apple, celery, cherries, pecans, and mix well
Salt and Pepper the mixture
Mix the Yogurt, Mayonnaise, thyme leaves and cayenne in a small bowl
Add the Yogurt mixture to the Chicken mixture and mix well
Adjust the seasons, you may want to add more salt or more cayenne
Refrigerate for at least 2 hours before serving to allow the seasons to set

  1. I like the idea of lightening the typical chicken salad that most people make with yogurt. I'm sure your dish is always one of the first to be eaten at a pot luck dinner.
