Welsh Skillet Cakes

Between now and November we will be hearing and seeing more and more about our national election that will be coming up.  The other day I saw these awesome little cakes on Libby's Twirls & Taste.  It just so happened that the Republican National Convention was to be on that night so I got busy and made these awesome little cakes. I am sure that there will soon be a recipe for the Democratic National Convention as well.  Until then we will just enjoy Ann Romney's Welsh Skillet Cakes.

Welsh Skillet Cakes




Welsh Skillet Cakes

1 1/4 cups currants
1/2 cup milk
3 1/2 cups flour
1 cup sugar
2 teaspoons nutmeg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
Beat egg with milk and add currants.  
Sift all the dry ingredients together and work the butter into the flour and mix until mealy. Pour milk and currants over flour and butter mixture all at once and mix well.  
Wrap in Wax paper and chill at least one hour.  
Roll it a little less than half an inch, actually about 3/8 inch.  You may think this is too precise, but it's very important not to roll to thin.  
Cut with cookie cutter.
Cook on a pancake griddle greased with oil at 325 degrees on both sides.  Flip the cookies when you see they are all shinny.  Cook it for less amount of time on the second side.
Roll in granulated sugar and let cool.  Resist the urge to eat them right out of the oven, these are the only cookies that taste better cooled.

We had a lot of fun with the "healthy discussion's" for the politicial evening and the Welsh Skillet Cakes were a big hit, they carried by a majority! I sure am glad that you stopped by today and hope that you will come back real soon!

  5. My other half is from right on the Welsh border. We tried to make these on Christmas and most of the got burnt! I will have to try your recipe! I've pinned it to add to my holiday cookie list!
