Cranberry Nut Bites

Every year the Saturday  evening right after Thanksgiving our little community has a tree lighting.The lights on our Community Tree are turned on, then we all go inside for hot chocolate, little treats and Christmas Carols. Everyone brings little treats which is almost the best part. I brought my Cranberry Nut Bites and I am sharing the recipe with you.

Cranberry Nut Bites
Miz Helen's Kitchen
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ginger
2 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cloves
1 cup granulated sugar
1 cup brown sugar
2 sticks unsalted butter melted and cooled
4 eggs beaten
2 cups pumpkin puree
1 cup dried cranberries
1 cup pecans toasted and chopped
  • Mix the first10 dry ingredients. Mix together the pumpkin, butter and eggs, then add to the dry ingredients. 
  • Mix well. Stir in the dried cranberries and pecans.
  • Pour into greased mini muffin tins. Bake 350 degrees for 15 to 20 minutes.
Icing
2 cups confectioners sugar sifted
1 teaspoon pure vanilla extract
4 to 6 tablespoons water, plus extra as needed
Mix together and frost this will harden just a bit as it drys.

We had a great evening at the Christmas Tree Lighting, it always gets our season started. I sure hope you are having a really good day. Come back to see me soon!
