I am so happy you dropped in to see me this morning.  Have some coffee and we will visit while I make this Squash Casserole.  We have had the most beautiful squash all summer from our garden.  This is really one of my favorite recipes...well one of the many, because I just love squash.

Summer Squash Casserole
Miz Helen's Kitchen
Ingredients
3 medium yellow summer squash sliced
3 medium zucchini sliced
1/2 medium yellow onion chopped
1 cup chopped Green Chile's
1/2 cup longhorn cheese, shredded
1/2 cup Monterey Jack cheese, shredded
1/2 stick butter, chopped in pieces
2 well beaten eggs
Directions
Blanch the squash and onion together until the onion is clear.
Drain very well
Add
1 cup chopped Green Chile's, 1/2 cup longhorn cheese shredded, 1/2 cup Monterey Jack cheese shredded, 1/2 stick butter chopped in pieces, 2 well beaten eggs.
Add
Salt, Pepper and a dash of red pepper
Pour into buttered casserole dish
Bake 350 degrees for 1 hour or until set

  2. I agree - who wouldn't love to dig into this? I love summer squash...Joe likes it grilled but I am sure he wouldn't object to this at all. He loves cheese.

  4. Ummm....Nana....First what does it mean to blanch? Second...I have one huge yellow squash and one huge zucchini. How can I modify the recipe to only need these?

  5. Miz Tiffany, To blanch means no longer than 3 minutes. Don't over cook the squash in that process or it will be to soft. Make sure you drain it really well. If you have a huge yellow squash and a huge zucchini, I would not modify the recipe. You will have enough squash it will be fine. You will love this recipe. Let me know how it turns out.

  8. I made this for dinner last night. Yummy! I have a lot of favorite recipes for summer squash but we eat a lot of it so always on the lookout for new recipes. This one is a keeper! Thanks for sharing!
